Ảnh hưởng của nhiệt độ chiết đến khả năng chống oxy hóa in vitro của polysaccharide từ cây Dây cứt quạ đã được khảo sát. Kết quả cho thấy ở nhiệt độ chiết 80°C thì hoạt tính chống oxy hóa của polysaccharide là cao nhất. Tổng hàm lượng chất chống oxy hoá là 0,2726 ± 0,0003 mg GA/g hoặc 0,1776 ± 0,0001 mg AS/g. Ngài ra, các giá trị IC50 trong các mô hình bắt gốc tự do DPPH và ABTS của polysaccharide trong mẫu PS-W-T80 lần lượt là 0,83 và 3,30 mg/mL. Phân tích quang phổ hồng ngoại biến đổi Fourier cho thấy polysaccharide của mẫu PS-W-T80 có các đỉnh hấp thụ đặc trưng thường thấy trong các cấu trúc polysaccharide. Khối lượng phân tử trung bình của polysaccharide được chiết xuất là khoảng 5,56 × 104 Da. Những kết quả này cho thấy polysaccharide của mẫu PS-W-T80 từ cây Dây cứt quạ là một tác nhân chống oxy hóa tiềm năng.
